Cotyledons are the first leaves that appear when a plant emerges from seed.
Cotyledons rarely look like the adult plant's leaves, as you can see in this photo:
For many vegetable crops, you can transplant seedlings with the cotyledons below the soil line. Very often, these meristem tissues will transform into root tissues, adding nutrients and vitality to your plants.
